Quinoa + Kale

In an attempt to eat healthier, and also I really miss food from home, I’ve been pinning a lot of healthy recipes lately, and this one looks especially good! Quinoa and kale patties

Listed below are the ingredients that the recipe calls for, but I think adding a little carmelized goat cheese and avocado would be phenomenal. Also, to make it non-vegetarian, since the texture is similar, adding crab meat would make for awesome crabcakes with quinoa and kale.   • 1 cup quinoa
  • 2 cups water
  • 4 eggs, whisked
  • 1/3 cup Parmesan cheese
  • 3 spring onions, sliced thin
  • 3 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1 cup steamed kale, chopped
  • 1 cup breadcrumbs ( GF friends: be sure to use GF breadcrumbs. I always make my own.*)
  • 1 teaspoon olive oil
  • optional toppings: avocado, cilantro, lemon juice, salsa verde, garlic oil
